Hot take: my old boss in Boise said marbling means less than how the animal moved, and I can't shake it
He ran a shop off Franklin Road for 30 years and swore the pasture-raised beef he got from a farm in Kuna cut cleaner and tasted better than the grain-fed stuff with twice the marbling, so now I'm second-guessing how I grade every ribeye that comes through my cooler.
