I finally swapped my boning knife after 5 years of stubbornness

I always thought my old 6-inch curved boner was fine until a guy at the shop floor sharpened one of his knives and let me try it side by side on a pork shoulder. The difference in how cleanly it separated the fat from the muscle was night and day, and I felt like a fool for being cheap. Anyone else hold onto a tool way too long just because you're used to it?

My 10 year old chef's knife still feels perfect to me so I get why you stuck with that one.

Funny thing about that @charles919, my "perfect" knife is actually my grandpa's old pocket knife. It's older than me, maybe 50 years, and the blade wobbles like a loose tooth. But I can still dice an onion with it... as long as I'm patient and don't mind my hand cramping up from the weird angle. The real trick is keeping a bandage handy for when the wobble wins.
