That one Tuesday where everything went sideways

Last spring I had a day I still think about. Got a whole steer in from a local farm. Beautiful animal, grass fed, good fat cover. I was breaking down the forequarter and hit a spot in the chuck that was full of abscesses. Had to trim out maybe 8 pounds of meat. Lost money on that whole primal. Then right at lunch my band saw blade snapped. Took me an hour to get the new one on and tensioned right. Ended up working till 8 PM just to finish my orders. Customer that picked up the ground beef the next day said it was the best she ever had. Made it worth it I guess. Anyone else had a week where nothing goes smooth but the product still turns out good?

Yeah that hit close to home. I had a similar thing happen with a pork shoulder last fall. I was breaking it down and found this deep pocket of infection right in the money muscle. Had to cut out a good 3-4 pounds and it just killed my yield on that whole piece. @tarajenkins im with you, it's a sick feeling when you see that greenish yellow goo and know your profit just walked out the door. What saved me was that I had some extra trim from a different batch that was clean and I ground it all together. Customer ended up raving about the burgers they made. Funny how the worst days sometimes produce the best feedback. I just try to remind myself that quality control is what keeps people coming back even if it hurts in the moment.
