Went to a halal butcher in Detroit last weekend, something felt off

Ngl I walked into this spot on Michigan Ave and the guy was cutting lamb with a bandsaw that had rust all over the blade. I asked him about it and he just shrugged and said 'it's fine, it's dry age.' Has anyone else seen sketchy equipment at a shop and just walked out?

Nah, that's not dry age, that's just rust. Dry aging requires specific temp and humidity control, not just leaving meat on a dirty blade. I'd have walked out too man, sketchy equipment is a hard pass.

And yeah, if the guy is that casual about a rusted blade, makes you wonder what else he's cutting corners on that you can't see. I mean, if they can't keep the basic stuff clean, how's the meat handling actually going down in the back?
