A guy at the St. Louis farmers market showed me a $6 bag of chicken backs makes 3 days of stock
I was at the Soulard market two Saturdays ago buying a $4 bag of carrots when this older guy next to me asked the butcher for all their chicken backs. He said he pays about $6 for a big bag and simmers them with onion skins and carrot tops for stock that lasts him all week. I tried it that Sunday and got 3 full jars plus enough to cook a pot of rice and a soup. I had been tossing that stuff or paying $3.50 a carton for the boxed kind. What scraps do you all save that I'm probably throwing away?
Three jars plus rice and soup from six bucks of bones is a good deal, no question. But the claim that it lasts all week is doing a lot of work there. Stock freezes fine, so the math only works if you were already going to make soup and rice anyway. If you toss the bones and buy a carton once a month, you saved yourself two hours of simmering for maybe four dollars. The scraps thing always sounds better on a forum than it plays out in a real kitchen.
