Overheard a line cook at the diner on 5th say 'a clean station is a slow station' and I'm still thinking about it.

Oh man, that's a real kitchen mindset right there. I read an interview with a chef once who said the same thing, that during a rush a messy station means you're flying. It's not about being dirty, it's about not wasting a single second wiping down when you could be plating. The clean up happens after the storm passes. That cook is probably just saying if everything is spotless, no orders are coming in.

Yeah, "the clean up happens after the storm passes" is so true. I tried to keep wiping my counter while cooking dinner last night and totally burned my garlic. I guess my home kitchen rush is just me against one sad onion.
