inLearned the hard way about headspace in my kraut crock
Right on with the packed tight and enough salt part. I had the same mold headaches until I figured out I was skimping on salt and not pressing it down nearly hard enough. Once I added more salt and really mushed it in there, the brine stayed put and the mold stopped showing up.

Honestly, is this really that deep? A sour trash can seems like a pretty low stakes problem. I just rinse out my bin with some bleach water once a month and call it done. Freezing coffee grounds feels like an extra step for something that's not even that bad.

Oh totally @maryh96 the underwater cut thing is no joke. Jean knew what she was talking about, I had the exact same reaction when I first tried it on some peonies that were droopy before I even got them in a vase and they stood straight up overnight. It really does make a difference, I swear by it now on every single cut.

Yeah I had a similar thing with a steel supplier near Dearborn, showed open on Google and everything.
