Unpopular opinion: the 22 year old line cook at Rosa's on 5th taught me more in one night than my old exec did in a year
I was running the pass at a spot in Columbus a few months back and this kid Marcus watched me plate a risotto and just said "you're crowding the rim, it looks like you don't trust the food." Nobody in 12 years of kitchens had ever put it that plain to me. I scraped the plate and replated it cleaner and the guy was dead right. Any of you ever get schooled by someone half your age in the middle of service?
Kid was right about the plate but that doesn't mean he taught you more in one night. Marcus gave you one sharp read on one dish. Your old exec probably drilled you on a hundred things over that year, you just stopped noticing because it was routine. A fresh set of eyes catches stuff you're blind to, sure, but blind spots aren't the same as lessons. The 22 year old saw one thing clear because he had no habits in the way. Your exec had to build your whole base first.
