Vent: My entire mise en place slid off a wet counter during a 75-top wedding service.
I was plating the main course for a wedding at the Grandview Hotel last Saturday. The dishwasher had just sprayed down the line and left a puddle I didn't see. I turned to grab a pan, my elbow bumped the edge, and a whole hotel pan of blanched asparagus and six ramekins of beurre blanc went flying. My sous chef just said, 'Well, that's dinner.' We had to pivot immediately, using roasted carrots from a backup veg prep and whipping up a quick lemon-caper butter. Has anyone else had a major station wipeout during a rush, and what's your quickest recovery move?

Watched a full sheet tray of prepped salmon portions slide into a floor drain during a Friday night rush. We had to butcher whole sides of salmon on the fly, my knife hand was cramping for hours. That lemon-caper butter save is solid, we always keep compound butts rolled in parchment for exactly that kind of disaster.
