Finally figured out why my espresso was always sour after 8 months

Turns out I was flushing my grouphead without the portafilter locked in. My buddy Mike watched me do it and asked why I was washing the machine instead of warming the basket. Checked my brew temp and it was dropping 8 degrees every shot. Anyone else miss obvious steps for way too long?

Flush your grouphead with the portafilter locked in but empty, that keeps the basket warm and the brew temp stable. I did the same thing for months until I measured my water temp right at the basket and saw a 10 degree drop. Get a cheap thermocouple and check your actual brew water temp, it's the easiest way to stop chasing sour shots.

Right, because nothing says "good morning coffee" like playing mad scientist with a thermocouple before you've even had your first sip. Next you'll be telling me I need a PID controller on my toaster to get consistent toast temp. Still, you're probably right that I've been blaming my beans when it's actually my basket turning them into cold soup.
