Actually it's the rub, not a crust. The coffee grounds in the rub add that bitter note. Makes the meat taste deeper.

Used to think coffee on meat sounded real weird tbh. Ngl though, that bitter crust with the salty fat just works perfectly. Totally changed my mind about it.
