Everyone says you need a full double stack at the pass, my Saturday night proved otherwise
Last Saturday we ran a 190 cover night at our spot in Buffalo with one guy plating and a heat lamp doing the heavy lifting, and tickets still came out in under 11 minutes all night. I know the standard advice is two bodies at the pass no matter what, but we cut it down to one after our second guy quit in March and honestly the extra hands were just bumping into each other. What's the actual cover count where one person at the pass stops working for you?
