Shoutout to the guy who told me to get a 60-quart floor mixer instead of a tabletop model for my bakery startup in Denver.

After burning out two smaller motors in six months, I finally listened and the Hobart N-50 has handled triple batches of sourdough without a hiccup for over a year now, so who else has made a similar 'buy once, cry once' equipment choice that actually paid off?

So the funny thing about that whole buy once cry once idea is I actually went the opposite direction with my first walk-in cooler and it cost me way more in the long run. I grabbed a used 2-door from a restaurant that was closing down, thought I was smart saving a few grand. That thing leaked like a sieve from day one, had to patch the door seals with duct tape just to keep it at 38 degrees. Finally broke down and got a new True unit and holy cow the difference is night and day. My electric bill dropped by like 40 bucks a month just from having proper insulation and working gaskets. Sometimes you really do pay for the lesson twice before you learn it.
