Went from guessing hood filter swaps to a laminated chart, and I can't tell if I'm better off
Back when I ran the line at a spot in Akron, we just eyeballed the baffle filters and swapped them when the grease started dripping on the flat top, which was probably every 10 days or so. Now my current kitchen has a laminated chart taped by the hood and we pull and soak them every Monday and Thursday, no exceptions. Part of me thinks the chart is overkill and the old eyeball method worked fine for a crew of four. The other part of me remembers the Thursday night the old system failed and we set off the suppression system mid service. So I'm torn: is a written PM schedule for hood filters worth the fuss, or does it just make people stop paying attention to the actual condition?
