Found out the hard way that burping your ferments matters more than I thought

I had a batch of hot sauce that smelled like rotten eggs after 10 days. Turned out I wasn't releasing the CO2 often enough and the bacteria got stressed. Anyone else ruin a batch from not burping enough?

Rotten egg smell is the worst. I've definitely had a batch go bad from forgetting to burp it enough.

My buddy Sam made a batch of sauerkraut and forgot to burp it for almost two weeks. The mason jar actually bulged at the lid and when he opened it, the gas shot kraut juice all over his kitchen ceiling. He said the rotten egg smell lingered for days and he never skipped burping again after that.
