That guy who said to never stir sauerkraut after day 3 was dead wrong.

I read a comment in the Fermentation Station sub last night saying oxygen after day 3 ruins kraut, but my last 5-pound batch of red cabbage I stirred on day 5 came out the best I've ever made. Anyone else break the 'rules' and get better results?

Wait, does this video really need to be perfectly scientifically accurate for you to get the point? It's a 3 minute explainer, not a doctoral thesis.

My red cabbage batch I stirred on day 4 and day 6 turned out fantastic, better than any no-touch batch I've made. That oxygen rule is total bunk in my experience.
