Best fridge dump I ever had was after a bad week at work
Last Thursday I came home with half a jar of pickled jalapenos, some sad broccoli, and a block of cheddar that was getting hard edges. I was too beat to go shopping so I just threw it all in a skillet with rice I had in the pantry. Turned out to be the best stir fry I've made in months, spicy and cheesy and weirdly perfect. Now I sorta look forward to those nights where the fridge is a mess because it forces me to get creative. Anyone else have a combo that sounded awful but tasted amazing?

Wait "lunch meat" in an omelet? Like deli ham or turkey or whatever? I'm not gonna lie Wade, that throws me off a little. I've thrown all kinds of sad stuff in eggs before (canned corn from the back of the pantry is surprisingly not bad), but lunch meat feels like it'd get weird and rubbery in there. Did you like chop it up super fine or just toss in whole slices? I'm kinda curious now but also scared to try it myself.

Wright you gotta try it diced up small, it gets crispy edges in the pan. I've done the same thing with leftover salami and it was weirdly amazing. Sad fridge omelets are an art form at this point.

Yeah pretty much every good dinner I've had this month started with a sad fridge. The key is to not overthink it. If you've got eggs and some leftover roasted veggies you can throw an omelet together that tastes way better than anything you'd plan out. I've been doing that with old bell peppers and random bits of lunch meat, just dice it all up and cook it with some cheese. It never looks pretty but it always hits the spot.

Wade you nailed it with the not overthinking part. The best meals I ever throw together come from staring at a half empty fridge and just grabbing whatever is left. That omelet trick with old veggies and random cheese is a game changer, never fails to save dinner. People spend way too much time planning when a simple scramble can beat a fancy recipe any day. What is the weirdest combo you have thrown in an omelet that actually worked?
