My friend Jake told me to always keep a jar of kimchi in the fridge for emergencies

I thought it was weird advice until last Tuesday when all I had was leftover rice, two eggs, and that jar. I fried the rice with the kimchi and made a quick scramble, and it was actually a solid meal. Anyone else have a single ingredient that always saves them when the fridge looks empty?

Totally get this, kimchi is a lifesaver for sure. I always keep a bag of frozen peas in the freezer for the same reason. They thaw fast and you can toss them into literally anything, rice, pasta, eggs, to make it feel more like a real meal. Canned beans are my other go-to, just drain and rinse.

Disagree on the peas, they're a solid backup veggie if you cook them right. Toss them straight into a hot pan with some butter or oil, don't just let them thaw in the dish. That keeps them bright green and stops the sogginess. Canned beans are a total win though, especially chickpeas for a quick roast. What's your method for the peas?
