My neighbor told me to always keep a jar of kimchi in the fridge for emergency meals

She said it a month ago, and I finally grabbed a jar from the Asian market. Tonight, all I had was some leftover rice, two eggs, and half an onion. I fried the rice with the onion, scrambled the eggs in, and stirred in a big spoonful of that kimchi at the end. It was incredible! Totally saved dinner. What's your go-to 'magic' fridge item that can pull a meal together?

My magic item is a tube of harissa paste. It turns plain roasted veggies or a simple soup into something with real depth. That stuff is a total flavor lifesaver.
