The onion trick I learned from my grandma changed how I roast everything

I kept wondering why my roasted veggies came out soggy or burnt, never that nice golden brown. Last Tuesday I watched my grandma toss a quartered onion into the pan before adding anything else, and it soaked up all the moisture while adding flavor. Has anyone else tried using an onion as a dehumidifier in your roasting pan?

That onion trick from your grandma sounds brilliant, I gotta try it. My veggies always end up either waterlogged or burned too, drives me nuts.

Whoa hold up, I'm gonna be the one to say it - that onion trick is way overhyped. Ngl, I tried it exactly like my grandma showed me and my roast veggies still came out half burnt on one side and soggy on the other. Tbh, I think people just get lucky with their oven temps and blame it on the onion water.
