My grandma never chilled her dough and her crusts were perfect. I think some recipes just have too much water or overwork the gluten. The chilling step is fixing a different mistake you were making.

Why does nobody talk about the grease traps in kitchen electrical panels?

Watch that non-conductive degreaser idea, it can still cause issues if it's not rinsed off completely. I saw a place where they wiped the panel but left a film that actually attracted more dust and grease. Over a few months, it created a worse conductive layer than before. The breaker started tripping every time the fryers kicked on. You really need to make sure the cleaning is thorough, not just a quick wipe. Otherwise, you're just moving the problem around.

My search for Wi-Fi in a Moroccan souk turned into an unplanned language lesson.

Ever try to ask for a Wi-Fi password and accidentally learn how to count to ten or describe a rug instead? I mean, I left that market knowing three words for 'spice' and how to say 'beautiful' but I still couldn't get my maps to load. I was just desperately pointing at my phone while a very nice man taught me colors. Idk, maybe it's just me but my survival language skills are all about tech support that never works. That portable hotspot is basically my apology to every friendly local I've ever confused.

PSA: Lime mortar is actually worth the switch
