Air fryer wings are better than deep fried and I'll die on that hill

I used to swear by deep frying chicken wings. Every Sunday at 3pm I'd drag out that heavy pot of oil, wait 15 minutes for it to heat up, and deal with oil splatter all over my stove. Changed my mind about 4 months ago when my nephew bought me a Cosori air fryer for my birthday. First batch came out crispy in 22 minutes with no mess and way less cleanup. The trick is patting the wings dry with paper towels and tossing them in a tablespoon of baking powder before cooking at 380 degrees. They come out just as crunchy as deep fried but without the gallon of oil and that greasy smell that hangs around for hours. Has anyone else found a better wing method than the old school frying?

Uncle Joe said Kenji Lopez-Alt tested this and found baking powder is the real secret.

Funny story about baking powder. My grandma swore by it for her fried chicken but never told anyone her ratio. One time my cousin tried to copy her recipe and used a whole can by accident. Chicken came out looking like a science experiment. Tasted like a chalky pancake. We still bring it up at reunions.

Actually it's baking soda that makes chicken crispy, not powder.
