Had a perfect kitchen week last month and it felt like a fluke
Everything just lined up. Monday the prep list was short, no call outs, the fryer oil was fresh. Wednesday I turned out 40 tickets of salmon without a single temp complaint. Even the dishwasher showed up on time. It was like the universe decided to give me a break for once. Then Friday a walk-in showed up with a 50 top at 7pm and it all fell apart. Has anyone else had one perfect week that made you suspicious like something bad was coming?

Forty tickets of salmon without a single complaint? That's a damn miracle right there. I'd be looking over my shoulder the whole next week waiting for the other shoe to drop.

Read somewhere that restaurant workers call that the "calm before the storm" week and honestly it makes too much sense lol. The universe always balances out with a nightmare shift right after.

Blame the dishwasher. @morgan.mary is right about looking over your shoulder but I'll go further. That guy showing up on time every day that week was the real red flag. Dishwashers are like the canary in the coal mine for a kitchen. When they are reliable, you know the universe is setting you up for a double hit of a broken Hobart and a health inspector walking in during rush. My old place had a perfect Tuesday once. Wednesday the dishwasher quit mid shift and we had to hand wash 80 sheet pans.
