My cousin in Boston swears by weighing flour but my old boss always scooped.

I was helping my cousin bake a birthday cake and she got out her scale, saying 'a cup of flour can vary by 20 grams.' My first bakery job, the head baker just scooped from the bin with a measuring cup and never had issues. Is the scale really that big a deal for home bakers, or is it more for pros?

Ever see how much flour gets packed into a cup when you just scoop? That's the whole problem right there.

Scales are the difference between a good cake and a sad, dense brick. Your old boss probably had years of practice to eyeball it right. For the rest of us, a scale is cheap insurance. That 20 gram difference is real and it ruins cookies.
