A judge at the Tulsa comp docked me for sweet sauce, do I change my whole recipe or stand my ground?
Got 7th out of 32 at the Tulsa contest and the judge told me my ribs were 'too sweet for KCBS, dial back the brown sugar.' Half of me wants to swap to a spicier vinegar base, but the other half thinks if I chase every judge I'll lose what got me here. Any of you ever changed your sauce after one bad scorecard, or do you just eat the loss and keep cooking your own thing?
Sweet sauce is its own lane and plenty of teams have built a name on it, so one judge telling you to go vinegar doesn't mean the whole recipe is broke. What matters more is whether that one card was an outlier or a pattern, because a single 7th place finish out of 32 isn't enough data to blow up your whole thing. If you look back at your last few contests and sweet keeps showing up as the knock, then yeah, maybe dial the brown sugar back a touch and add some heat or acid to balance it instead of throwing out the base. But if this is the first time anyone said it, I'd cook your ribs one more time and let the next table decide before you change who you are. Chasing every scorecard is how you end up with a sauce that tastes like nothing and pleases nobody, including you.
