Pro tip: that fancy offset smoker almost burned my house down

I was dead set against ceramic cookers for years, thought they were overpriced egg shaped nonsense. Then my offset smoker shot a grease fire 8 feet high during a 16 hour pork butt cook and I almost called the fire department. Has anyone else had a smoker disaster that made you switch gear completely?

that fancy offset smoker almost burned my house down" ... yeah, my buddy had his weber kettle catch the deck on fire during a brisket and he switched to a pit barrel cooker the next week.

150 dollars worth of meat gone in a flash, @the_elliot. I saw a guy lose a whole pork shoulder that way once. Lithium ion batteries near a smoker is a recipe for disaster too.
