Rant: hit 22 straight cooks with clean smoke on my Lang 84 and I finally get why the old guys say temp is everything
I used to chase every mod and guru fan I could buy, but a guy named Dale at a contest in Abilene saw my stack wide open at 325 and just shook his head. Last Saturday I ran 250 to 275 with a water pan and a split every 45 min, and the brisket bark was the best I have turned out in 3 seasons. Anyone else find that simple fire management beats gadget chasing, or am I late to this?
