Oh man, I feel that wait in my bones! I read a cooking blog that said letting a stew boil with the lid off is the old-school trick. It lets all that extra water steam away way faster than just simmering. I tried it last month with a beef stew and it went from soup to thick in like twenty minutes. Saved me from a very grumpy frozen pizza dinner.

Throw a little cornstarch slurry in there next time, works like magic. Almost ordered pizza myself last week waiting on gravy.
