Serious question, has rice and beans ever gone wrong for you mid cook
I was making a big pot of rice and beans on a Sunday night in my tiny Cleveland apartment, trying to stretch 3 dollars of dry goods into lunches for the work week. About 20 minutes in I realized the burner was too high and the bottom had already scorched into a solid black disc. I panicked, dumped the whole thing into a second pot without scraping, and the burnt taste still soaked through every single bite. I ate it anyway for 4 days because I wasn't about to waste it, but I want to know if there's a trick to saving a scorched batch or if I just need to babysit the heat next time.
That "solid black disc" part is the whole problem right there. Once rice scorches and sticks to the bottom, that burnt flavor is already in the steam, so pouring it into a second pot just moves the burnt taste along for the ride. The one trick that sometimes works is dumping it out fast without scraping, then rinsing the good stuff and cooking it the rest of the way in fresh water, but honestly it only helps a little. For real, the move is to drop the heat way down, keep the lid on, and check the bottom with a spoon every few minutes near the end. You can also put a heat spreader under the pot if your burner runs hot like mine did. Cheap lesson learned, but babysitting that pot beats eating burnt beans for four days straight.
