Am I the only one who sees guys using a boning knife for everything, even breaking down a 200lb hog?

I watched a new hire at the shop in Tulsa last month try to separate a shoulder with a 6-inch flexible blade and it took him 45 minutes, when a proper cimeter would have had it done clean in five.

Look, a good knife is the one in your hand that you know how to use. That boning knife is probably the only blade that guy feels comfortable with, and forcing a big cimeter on him would just make things slower and more dangerous. Skill with your tool matters way more than having the perfect tool. If he gets the job done without hurting himself, let him work.
