Tried a new water-based finish on a walnut table and it dried with a weird blue tint.

That blue tint on walnut is usually from the water reacting with the wood's natural tannins. Try a light sanding and switch to an oil-based finish for the next coat.

Actually that blue tint can be a cool effect if you lean into it.

Totally agree. Could even add a tiny bit of blue dye to the oil to make it a real feature, not a mistake.
