Used to think it was a waste of time compared to the store stuff. That first good batch you make yourself just hits different though, right? Totally changed my mind on it.

Oh man, that wet garbage smell is a rite of passage! My first try was so bad I almost swore off onions for good. You just gotta push through the sad onion water phase to get to the good stuff.

Okay but is it actually that much better? I burned a pot trying this and my kitchen smelled like wet garbage for a day. I get what max_price91 is saying about the first good batch, but mine just tasted like sad onion water. Store stuff is fine, it's just salty water either way. Maybe I'm missing the scrap-saving gene.
