Switched from hand-chopping mirepoix to using a food processor for large batches

Used to spend 45 minutes dicing onions, carrots, and celery for Sunday prep at my little bistro in Portland, but after my wrist started aching last fall I bought a Breville and now I blast through 10 pounds in under 2 minutes - anyone else find the texture difference worth the time savings?

Yeah the texture definitely changes with a processor, everything turns into mush if you blink too long. My sister got one for her cafe and now she just pulses like three times but it's still a little... soupy for my taste. Honestly the wrist pain thing hits close to home though.
