Trying to fix a broken hollandaise sauce during a Sunday brunch rush
Had a hollandaise split on me last Sunday. The line was backed up with 20 tickets. Tried the classic whisk in hot water trick. Nothing. Took me 45 minutes of messing with it before I finally got it back by starting a new yolk base and slowly adding the broken mess. Has anyone else found a faster fix for a totally broken emulsion?

Honestly, is a broken sauce ever that big of a deal? Like @oliviahenderson said, sometimes you just gotta let the small stuff go and start over fresh. Spending 45 minutes on a fix during a rush sounds way more stressful than just making a new batch.
