Tried a 'cold brew' with hot water and it was a game changer

I got a bag of this super light roast from a shop in Austin and the bag said to only brew it cold. I was out of time one morning so I just did a normal pour over with it, expecting it to be super sour. It was actually the smoothest, sweetest cup I've made in months, no joke. Has anyone else had a coffee that totally broke the 'rules' on the bag and turned out amazing?

Honestly, it's just coffee. The rules on the bag are a suggestion, not a law. You found a way you like it, so just enjoy it.

Wait, you read the instructions on the coffee bag? I just tear it open and dump it in the machine. Who has time for all that measuring and timing?

That "rules are a suggestion" thing is how I ended up liking burnt toast.
