Overheard a health inspector mention my walk-in temp logs were off by 2 degrees

Was doing a late night prep shift last Tuesday when I caught a health inspector chatting with the owner about our temperature logs. He said we were consistently recording 38 degrees but his probe read 36. That got me thinking about how we just copy the same numbers shift after shift without actually checking. I went back and tested our wall thermometer with a calibrated probe and it was reading 4 degrees low. Now I'm wondering how many other places just trust their built in gauges without verifying. Has anyone else run into this gap between what you log and what's actually happening in your cooler?

lol yeah most walk-ins have shitty gauges nobody ever double checks.
