Appreciation post: my offset smoker finally held 225 for 6 hours straight

Been fighting with this old offset for months. Last Saturday I woke up at 4am, threw in some hickory, and it just held steady. No spikes, no dips. Just steady smoke rolling out. Cooked a 12 pound brisket from 5am to 4pm. Bark was perfect, got that deep red ring. Has anyone else had a day where your smoker just suddenly clicked with you?

Man I had that exact same moment with my offset maybe six months ago. What did it for me was finally figuring out my wood split size, I was using chunks that were way too big before. Once I started using splits about the size of my forearm, the temp just settled right in and stayed put. That steady smoke rolling clean like you said, when it finally clicks it feels like winning a little battle.

Gotta disagree man, bigger splits have been way more stable for me once I got my fire management down.
