The moment I realized I was overcooking rice for 20 years

I was at my mom's house last Tuesday and she made rice in like 12 minutes flat. I always did 20 and wondered why it was mushy. She just gave me this look and said 'you're not supposed to boil the soul out of it.'

Oh man, that hit way too close to home. I did the exact same thing for years until my roommate finally asked me if I was trying to make risotto or something. Now I just set a timer for 12 minutes and it comes out perfect every time.

12 minutes is too long for my stove, the eggs come out rubbery with that green ring around the yolk. I do 8 minutes exactly and then an ice bath, perfect soft boiled every time.
