Appreciation post: Our kitchen had to pick between a big walk-in cooler or two reach-ins

When we redid the layout for our new spot in Springfield, the big choice was cold storage. We had space for one large walk-in cooler, about 8 by 10 feet, or we could fit two separate reach-in units. The walk-in meant we could store all our produce and proteins together and roll carts right in, which sounded great for speed. But the reach-ins would let us split things up, keeping fish away from veggies to avoid cross-contamination. We went with the walk-in for the sheer volume, thinking it would save us time on deliveries. After six months, I'm not so sure. It's harder to keep organized, and if the one unit has a problem, we're in trouble. Has anyone else made this call and wished they did the opposite?

We had a similar debate about a prep sink. Wanted the big double basin for washing veggies and filling pots. Ended up with two small single sinks in different spots to save counter space. Now I'm always walking back and forth. The bigger one would have been slower to drain but way less steps.
