Hit 1,000 covers in a single night last Saturday and my feet still hurt
We've been open for about 3 years now and this was the first time we broke that number. It just sneaks up on you when you're busy. The crazy part is we didn't even have anyone call in sick or any big catering order. Just a regular Saturday that got slammed from open to close. Had one of my dishwashers walk out at 7pm too. Made me wonder how many other places are pushing these numbers without the staff to back it up. How do you all handle those surprise rushes without burning out your crew?
