I actually prefer how my flattop cooks after the seasoning got scraped off by accident 6 months ago

Last January a new guy on the line hit my 3 year old griddle with a metal scraper way too hard and took off most of the seasoning in one spot. I was furious at first, thought it was ruined. But over the next month I noticed eggs and pancakes stopped sticking in that bare patch, and the heat transfer felt way more even across the whole surface. Now I intentionally keep the seasoning thin and don't baby it like everyone says to. Has anyone else tried running a flattop with minimal seasoning on purpose?

Oh great, so I've been fussing over my seasoning like a new parent for nothing? Guess my griddle's about to go through its punk rock phase.

Hah, not for nothing. You're missing the whole point. Seasoning is what keeps your griddle from turning into a rust bucket after one greasy cook. Punk rock phase? More like a trip to the metal scrap yard. Proper seasoning builds layers, like armor. Without it you'll be scrubbing caked on junk for hours.
