That one comment about hood cleaning schedules got under my skin
Was scrolling through a local restaurant review site last night and saw someone complain about a kitchen being "dirty" because they spotted a greasy hood. The owner replied that they clean the hood every 3 months like clockwork. I've been in this business for about 8 years now and I can tell you, waiting 90 days between cleanings is playing with fire. Our last fire inspector in Cleveland wrote us up after 2 months because the buildup was already a hazard. Have any of you pushed back against your hood cleaning company when they try to stretch the schedule?

Start with a different company if they're pushing 90 days. I mean 2 months is already pushing it depending on how much oil you're running through those fryers.

Have you ever had a fire inspector write you up for waiting too long? That happened to me in Cleveland after just 2 months and it cost me a lot of stress. Three months is definitely pushing it in my book, especially with the amount of grease a busy kitchen puts out.

Feel you on that one. Getting written up by a fire inspector is a nightmare. I've had a buddy in Philly get hit with a violation for waiting just 6 weeks and it was a huge pain. This whole 90 day thing is playing with fire honestly. The stress and cost of dealing with that kind of violation is way worse than just paying for a service a little sooner. Most places don't realize how much grease builds up before it's a real hazard too.
