Lol at this point I've gotten so much conflicting advice I'd probably give someone food poisoning. I mean my last batch of kraut looked... questionable.

Honestly maybe the gear is the problem, not the advice. If your jar or lid is messed up it won't matter how good the steps are. Try a totally new setup next time.

Yeah, paule53 has a point about the gear. I swapped out my old jar for a new one and my next batch turned out way better.
