Looking back, I wasted about $75 on a fancy airlock kit that was just overkill

Back when I first got into fermenting hot sauce, I thought I needed all the gear. I bought this special glass airlock setup online, thinking it would stop any chance of mold. It was a pain to clean and the gaskets kept slipping. After a few months, I just went back to using a simple mason jar with the lid barely on. The hot sauce turned out the same, maybe even better because I wasn't stressing over the gear. Anyone else find that simpler is better for basic ferments? What's your go-to setup now?

Rant: I had to pick between a free online course and a paid one for learning basic video editing

Last Tuesday, I found two options: a free 10-hour YouTube playlist or a $45 course on a learning site. I went with the free one because, well, free! The first lesson was fine, but by video three, the guy started explaining things with a puppet named 'Clipboard Carl' for 20 minutes. I learned nothing about editing, but now I know a puppet's backstory. Has anyone else picked the 'free' option and gotten a totally weird surprise instead of the actual skill?

I went to that new farm market in Springfield and their kraut setup made me think

They had a huge display of fermented veggies, all in those fancy glass jars with airlocks. The owner was really proud of it, saying it was the 'only proper way' to do it. But honestly, my grandpa in Ohio made the best sauerkraut I've ever had in a simple crock with just a plate and a rock on top for forty years. It feels like the gear is getting more focus than the process and the taste lately. Has anyone else made great ferments with just basic kitchen stuff?

The new floodlights on Maple Street are wrecking our galaxy views

Seriously, who approved those insane LED floodlights for the park renovation? They blast light straight up into the sky, washing out everything past Orion. Before, I could see the Andromeda galaxy from my deck, now it's just a gray blur. The town council needs to fix this or we lose one of the best things about living here.
