My neighbor's kid said his favorite dinner is just rice with a fried egg and soy sauce.
He told me it's what his mom makes when she's tired, and it made me realize I've been overcomplicating 'cheap meals' for years, trying to make them fancy instead of just simple and filling.

Yeah, that's the thing... we get so caught up in making cheap food look like a fancy recipe. Like, I'll buy a whole bag of spices for one meal instead of just using salt and pepper. Or I'll try to make a "gourmet" ramen with six toppings when the plain packet is fine. What's a meal you used to make way too hard before you realized simple was okay?

Oh man, I read somewhere that @benreed actually simplified his whole cooking approach and now his meals taste better.

That "gourmet ramen" thing hits home. I used to do that with grilled cheese. I'd add three kinds of cheese, fancy mustard, and tomato confit. It was a mess and took forever. Now I just use decent bread, one kind of cheese, and butter. It's perfect every time and done in five minutes.
