Soft blocks are a lifesaver for that. I keep a worn-out piece of foam pipe insulation in my kit for the same reason, costs nothing and works on crazy tight curves.

That's the kind of hack you only figure out after fighting with a bead for an hour. I usually end up with a weird bubble of mud I have to sand for days, so your slit idea is way smarter. Gonna try that next time my house decides to be weird.

That "simple wired probe for the long smokes" is the real key. I tried a few wireless ones that were always fussy, but a basic probe with a long cord just sits in the meat and works every time. It's the one piece of gear that never lets me down.
