Had to pick between a brush and a chain for my clay flue last week

Read this one article from a chimney sweep in Ohio. He said clay flues are actually harder than people think. Not as fragile as everyone assumes. Chains can definitely work if you use a good poly head. Brush is safer though for sure. Just gotta accept it's gonna take longer with the brush. I'd rather spend the extra time than risk cracking my flue with a chain.

Just walked out of a stationery shop in Austin and I'm worried about washi tape

The washi tape I got from a random Etsy shop has been stuck to my laptop for like 8 months now and it's still fine. Some brands are just trash honestly, doesn't mean the whole store is scamming people. Your buddy probably just got a dud roll or put it on a surface with dust or oil on it.

Had a talk with my prep cook that changed how I plate pasta

wait hold on THREE customers actually said something about it? that's wild man. i've been cooking for years and the number of times someone has complimented a plate of pasta is basically zero. maria sounds like she's got skills. my line cook james showed me how to season meat from higher up so it distributes better and i thought he was messing with me until i tried it. now i do it every time.

Saw a guy at a farmer's market in Portland trimming brisket with a curved blade instead of straight

That curved blade might work for some, but twelve years of clean trimming tells me my straight knife knows its job just fine.

Just realized my kid thinks I'm a wizard at work

Tell my kid I'm basically a high temp metal chef and his eyes just glazed over. Said that sounded way less cool than a wizard. Guess I gotta work on my presentation skills or get a bigger hat.
