PSA: I just read in a library book from 1982 that you can over-knead dough in under 5 minutes with a modern stand mixer, which goes against the 'more is better' advice I always see.

Missed my stop twice this week because of Spotify shuffle

I started putting my phone away during my commute a few months ago, and it changed everything. @uma_baker99, I got tired of feeling like I was missing my own life, so I just stopped looking at it on the train. Now I watch people, I look out the window, I actually notice when we pass that old factory with the graffiti on it. It felt weird at first, like I was breaking some rule, but now it's peaceful. You see a lot more when you're not staring at a screen, even if it's just how the light hits the station floor. Try it for a week, you might be surprised how much you were tuning out.

Unpopular opinion: a full face mask is safer than a half mask for most gas jobs

I did a deep clean on a sewer lift station in Tacoma last year and switched to a full face mask after the first ten minutes. That job had hydrogen sulfide readings that spiked every time we stirred up the bottom sludge, and I remember my eyes watering like crazy through the half mask even with good seal checks. Full face kept everything out, no fogging issues since I used a good defogger and a neck dam. The regulator failure at 60 feet is the real nightmare though, I had a similar scare on a river outfall dive when my demand valve froze open and the full face let me keep breathing while I cleared it. Seems like for anything with sewage or chemical exposure the full face is just a better bet even if it feels bulkier topside.

Good question, did you roast the scraps first or just boil them raw? In my experience, tossing them in the oven at 400 for 20 minutes before the simmer really brings out a deeper, richer flavor. That might be your missing link if the stock still felt a little flat.
